Cherry Tomato Basil Bread

I had some cherry tomatoes that I needed to eat ASAP.. and so of course, I thought of the most unhealthy way that I could possibly have them, and came up with this recipe. It's DELISH, in my opinion. I am not sure if this would constitute a bruschetta, or more of a french bread pizza. Either way, it's worth a try.

Brush your bread with butter and toast it in a large skillet.
Next mix your cheese blend, mayo, Alfredo sauce, basil, and garlic together in a small bowl.

Then slather it on your slightly toasted bread, sprinkle with oregano, add your sliced cherry tomatoes, and top with a little bit more cheese.

Bake in a 425 degree oven for about 10-minutes.

Cherry Tomato Basil Bread
INGREDIENTS:
  • 1/4 C. mayo
  • 1/4 C. Alfredo sauce (I prefer Classico in a jar.)
  • 2 C. shredded Asiago, Romano, and Parmesan cheese blend
  • 4 garlic cloves, minced
  • 2 tsp. chopped fresh basil
  • 1 loaf of crusty French bread
  • 1/2 stick of butter
  • Dash of Oregano

INSTRUCTIONS:

Mix cheeses (except about 2 tbsp. that you reserve for later), Alfredo sauce, and mayonnaise in a small bowl. Use a garlic press and and press the garlic into the mixture and stir. Set aside.

Slice cherry tomatoes and set aside.

Brush your bread with butter and toast in a skillet.

Spread mixture on warm loaves, sprinkle on a little oregano place your cherry tomatoes on top, and sprinkle with a little bit of cheese. Bake at 425 degrees until the cheese is hot and bubbly, about 10-minutes.

Slice and serve.
